Tofu Curry with Veges
Ooh Lord! This is one of my favourite. It's one hell of a quickie dish that one would think of and healthy as well. I was not really sure if I would love tofu with Curry. It tastes heavenly.
One thing you need to know, There are different types of Tofu . We have the Silken, Sprouted, Firm and the Extra Firm. In this case as I needed to fry, i went for the Extra firm which i was satisfied with the results. Sometime back i bought the Silken Tofu, Tried with the frying method and turned out to be a dissapointment. So I would highly recommend Extra firm or the Firm when frying with the vegetables.
The other thing I love about Tofu is that it's a huge source of protein and i don't need to refrigerate, Haaah! That's quiet something. Cooks fast and mouth-watering.
Hereby are the ingredients that i used.
1 package of the Extra firm Tofu
Broccoli (few stalks of broccoli)
Medium courgette / Zucchini
Half an Eggplant
1 medium white onion
2tsp of curry powder
1 tsp of ginger powder
1 tsp of garlic powder
2 tbsp Soy Sauce
1/4 tsp of salt
2 tbsp Coconut oil
It's not complicated at all.
Slice the onions and let the coconut oil heat up on low fire. Pour the onions onto your heated pan.
Let the onion cook till softens or gets a brownish colour, Be sure that your vegetables are already prepared as you will cook the veges first under low heat. Let the vegetables cook for about 15 minutes. Then add tofu, sprinkle the Soy sauce and stir.
The last part will be adding all your spices all together and stir occassionally.
I enjoy my vegetables when crunchy, So in this case i dint have to cook for a long time. This depends if you prefer vegetables well cooked or crunchy.
I served my Veges Tofu with plantain (banana).
One was enough for me which served as my carbs. I just heated my frying pan on low heat and added 1tsp of coconut oil. Cut into slices and let them brown in low heat. Shouldn't take more than 3 minutes. Serve hot and enjoy.
