Banana Chia Bread

One of my favourite recipe that I created, It feels good when you come up  with a recipe and goes well with your expectations, But! There is a story behind this Banana Bread , infact I got it right on my second trial.  I gathered my recipe and worked on it on a Saturday night but I was disappointed and literally hurt …haha! Why? One may wonder ..My Bananas! Maam .I had lost my organic bananas out of a simple mistake i made as i was baking.

   It's a shame that i could leave out the baking soda, knowing that this was not a cake i was baking rather than a quick bread . My kids were so disappointed but what could we have done? Spilt milk can never be recollected . We threw away ! Which is quiet shameful but no one could handle the taste and it was uncooked. Know what? I don’t give up easily i decided to bake again on the following Monday and my outcome was Exceptional , I was finally satisfied that my own recipe was on point and tasty as well . My family loved it and i was filled with joy . Nothing beats mummy's recipe ! Always on point, But I would say I was keen on my second trial although i still forgot to include my Coconut oil but infact i think it was not needed at all. Chia seeds played the role of the coconut oil.


  I would suggest that incase you want to try this recipe, you got to be keen with all the ingredients,  Any small mistake will cost you!  Like am still crying about my banana's ( my love for banana's is out of this world).

 Next thing is that this will take longer to bake , Don’t be surprised ! I took 1 hr and 20 minutes.

Hell yes! You need a well cooked bread ? Kindly follow instructions to avoid disappointment . I went through it so i am  aware what it feels like . 


Lets get straight to the ingredients:-

2 glasses of gluten free flour(Here I used the baker flour mix)

1/2 a glass of Oat flour

1 glass of raw Oats

2 tablespoon of chia seed ( use a half glass of water with the chia and let them overnight or few

 hours before baking)

6 Organic ripe bananas

1 tsp of Cardamon powder( For the spicy taste, If needed more spice just add more tsp of it)

1 tsp of Cinnamon

1 tsp baking powder(gluten free)

1 tsp baking soda( don't you add more! Use exact 1 tsp)



Heat the oven 30 minutes before baking to 200 degrees.

Cut the banana's into small pieces and mash them well. They shouldn’t be crumpy, They're needed as a liquid form. Once through set aside.

Mix the gluten free  flour with the Oat flour and add the baking powder , baking soda, Cardamon and cinnamon.

Add the mixture of flour to the mashed bananas little by little as you stir well for the batter to be incorporated.                                                                                                                  

 Add your chia seeds, stir and the final step, It's to add some Raw Oats to the batter and leave some to sprinkle on top. Bake and reduce the heat to 180 degrees.

Remember you are cooking for an hour then switch off the oven and let the bread stay in your oven for approximately 20 minutes . Don’t be worried about hardening.

Nope! Infact the bread will get that brownie colour.                       

 Don’t fail to check if it's ready before with your dipping stick.

 The thing I love about this bread its healthy, full of fibre ( oats are playing that role) and its spicy .

For anyone who would want to use the ordinary flour . There's no problem to that at all .Should give the same results .

This bread can be served with your favourite Jam or Peanut butter. Heaven knows how i love to spread peanut butter on my bread. The feeling is unexplainable!
