Rice Protein-Ginger Pancakes
What's up cool people, Here i got my Rice protein pancakes that tastes heavens, They're super delicious and
ofcourse gluten free. Now that my birthday, It's in two days time, I have choosen to celebrate my day, 2 days ahead
OOh Shit! Wait a minute am almost waving my 20's, No regrets whatsover! Turning 29 is quiet exciting to me.
I can't just wait to cross over to 30! Crazy? Not at all, This Girl is super excited!! Anyone with the same feeling?
So anyway today i decided to create my quick and healthy, Vegan pancakes which are gluten free. What i love about
this pancakes, They're soft just like the sponge cakes, Who even needs a sponge cake when you got these hearty
and mouth watering pancakes? When topped with chocolate of your choice or any other healthy jam preferrably a
home-made, The combo is spectacular! Here i used my homemade chocolate ganache with coconut milk and dark
chocolate ( Vegan) Though the choice is yours, Whatever rock your fancy!
They serve well for breakfast or brunch. Damn try this and let me know the outcome. For my pancakes to get that
softness and fluffy like a sponge cake, I whoever use baking soda with baking powder and the outcome is just Woow!
Here i'll give the ingredients needed and the instruction.
21/2 glasses of Rice flour
2 table spoon of Hemp protein powder.( Or protein powder of your choice, Here i used a plant based protein)
2 packets of soya joghurt
2 glasses of soya milk
1/2 glass of water
1 tsp of ginger powder
Stevia( You can use any sweetener of your choice, Though i use stevia or bananas but in this case i opted stevia)
Coconut Oil for frying
1 tsp baking powder( gluten free)
1/2 tsp baking soda.
Add the Rice flour onto your bowl,Protein powder, Baking soda, Ginger, baking powder and mix.
Then add the packet of soya joghurt, stevia ,Soya milk and blend together. for 3 minutes.
Depending on the consistency of your batter , It's here you can add little water as you mix
If the batter is too thick but don't exceed the half glass of water.
Heat your pan and once heated. Add coconut oil and pour 1/4 cup of the batter onto the griddle,
Cook the side till golden brown, Flip and cook the other side to golden brown. Preferrably 3 minutes each
Remember to place over medium heat.
Serve hot or cold.
The topping was done by my daughter as she wrote the first letter of my name "N" .
