Cinnamon Cookies ( Gluten free)

 

I purposely call these cookies  Nina's cookies!! I came up with the recipe right before my birthday last Sunday though

i was quiet hesitant about the outcome, It was my first time to come up with a cookie recipe and intended to have them

on my birthday. I would say these are Heavenly, Healthy, Gluten free and with no added sugar. Instead of sugar i decided

like always, Whenever i'm baking i use bananas as my sweetner. This brings about the banana flavour that's mouth watering.

Recently i've an insane sweet tooth and these comes in handy, I'm not guilty at all because they're healthy and full of fibre.

 

One can't just resist form having a bite. They're delicious! My kids loved them to bit. Without saying much i'll get straight

to the ingredients needed for these hearty cookies. They also come in handy when craving sweets. I'll give the recipe and you

rush in your kitchen and bake these healthy and hearty cookies for your little family. Ooh Boy! I forgot they're vegan friendly too.

 

INGREDIENTS:-

5 ripe bananas

1/2 cup melted coconut oil

1 tbsp cinnamon

1/2 tsp cardamom

2 1/2 glass Oat flour( I used the rolled Oats and blended for Flour)

1 tsp baking powder ( gluten free)

1/2 tsp baking soda

1 cup of soya milk or dairy free milk of your choice.

 

INSTRUCTIONS:-

Preheat the oven 180 degrees.

Mash well the bananas till they blend well; Add the melted coconut oil and stir as well.

In a bowl combine the oat flour with baking soda, Baking powder and Cardamom and whisk.

Add the Soya milk, banana and coconut oil mixture into the Oat flour mixture and mix them

all well till they're incoporated.

Incase the batter would be sticky, You can add a little amount of Oat flour into the mixture but dont 

let it thicken too much, Though i added just half a glass of Oat flour and then i let it aside for about

25 minutes. I later transferred in  small portions to a baking sheet with a Cookie scoop OR

Incase you have no cookie scoop, Definately a table spoon would work well.

In a baking sheet just spread it and flatten well forming a circle which should be about 2 inches apart.

Bake for about 45 minutes or till golden brown.
