Blueberries Banana Oat Muffins

Let me start by saying that i love Baking. The strange thing is that when am feeling bored or sad  I just find myself baking or creating a recipe and trying it out. Sometimes I just wake up with the urge to get into the kitchen and mess around with my Apron.

Mainly in this section will be recipe's of our healthy lifestyle and a combination of Kenyan and Polish food as well. We definitely can't do without both from time to time. My kids too love kenyan and polish food and so do I, But we try to eat and live a healthy lifestyle often, but again we love getting back to our roots. I hope that my followers will feel inspired and goes further and tries out the recipe's that  am currently working on from Starters, Main Dish, Salads and Deserts. I will also provide simple recipe's for the picky eaters especially the kids. My kids are quiet picky and I have tested some of the recipe's with them and has worked out for me.

Hereby is one of my favourite breakfast Muffins that can also be served as a Brunch too, Comes in handy as a healthy breakfast, I made them on a Saturday thinking that we would enjoy them on a Sunday morning, But i was surprised ,there was nothing left by the time my kids hit the sack. Which gave me a great feeling anyway. The kinda feeling that i get when my  kids enjoys our homemade food is inexplicable. In these muffins I decided not to use Eggs at all. As I did my research, i found that most people uses the egg whites and whole wheat flour which i opted with no regrets. The outcome was exceptional and delectable. By the way they would also fit in as a pre work out snack keeping you full and energetic. Here are the following ingredients I used.

Ingredients:
3 ripe bananas (bananas should be well ripe)
2 1/2 glass of Raw Oats
1 packet of frozen blueberries
2 tbsp Raw Honey
1 tsp baking soda
1/2 tsp baking powder(gluten free)
1/2 a glass melted coconut oil

Instructions:
Blend the rolled Oats. Put aside the Oat flour, Mix the baking soda and the baking powder. Mash the ripe bananas well till they Form a smooth Liquid Form. Mix the Mashed bananas with the honey and melted coconut oil . Stir all together till the mixture incorporate well. Pour some Oat flour and stir well as you add the rest of the remaining Oats flour. Once you done with the mixture. Add the frozen blueberries, stir a little bit and you would be good to pour the mixture onto your baking muffin pan. Remember to coat the baking pan with some butter and sprinkle abit of flour or bread crumbs, To prevent the muffins burn. Or To avoid that, one can use the muffin liners. Bake till brown but the usual time for baking should be 30 mins for the muffins. They are healthy Muffins.
